What makes the Audi S3 8V special
Audi S3 8V tuning: one engine, three power levels
The Audi S3 8V has one engine, the 2.0 TFSI EA888 Gen 3, with quattro and a Haldex clutch. S3 tuning therefore starts with the build date, and the tuning box is matched to it. It makes 300 hp and 380 Nm from May 2013, 310 hp from May 2016, and 300 hp again from November 2018, now with 400 Nm and a particulate filter. The manual gearbox has six speeds; the S tronic has six before 2016 and seven after. The cabriolet of July 2014 comes with the S tronic only.
With the GAN GT
Chip tuning with a GAN GT takes the 300 hp version with 380 Nm to 351 hp and 445 Nm. The 310 hp version of the facelift goes to 363 hp. The 300 hp version with 400 Nm of 2018 is not listed separately for the S3 8V: look for the same engine under the 2.0 TSI R of the VW T-Roc.

2016 Audi S3 tune: 300 hp or 310 hp, which one is mine?
Until April 2016 the engine has 300 hp, and from May 2016 it has 310 hp with 380 Nm on the manual or 400 Nm on the S tronic. So the build date decides, not the badge.

No, the module does not reprogram the gearbox.
Audi S3 chiptuning: tuning box or ECU remap?
A remap rewrites the software in the ECU, while the GAN module adjusts the sensor signals and leaves the checksums of the factory software as they are. Your manufacturer's warranty is preserved: the ECU software is never changed, and the module can be removed at any time. These are the stated gains for this engine type, not a dyno reading of your car.
Is a tuning module the same as a Stage 1 tune?
Not quite. Stage 1 usually means an ECU remap without replacing any parts. The tuning module also works without replacing parts, but it does not change the ECU software: it adjusts the sensor signals, comes off in about a minute, and the OFF button in the app restores the factory settings.
